Green Chile Quiche

Green Chile Quiche

Ingredients

  • 4 eggs large
  • 1 c milk
  • 1/3 c heavy cream
  • 1/2 t salt Kosher
  • 1/8 t pepper freshly ground
  • 2 scallions finely chopped
  • 1 14 oz can green chiles chopped, drained OR fresh roasted
  • 1/2 c pepper jack cheese or cheddar grated
  • 1 9 in pie crust deep dish
  • paprika for sprinkling

Instructions

  • Position rack in upper 1/3 of oven; set a baking sheet on the rack; preheat to 400 degrees.
  • Whisk eggs, milk, heavy cream, 1/2 t salt, and 1/8 t pepper in a medium bowl. Whisk in the scallions, chiles and cheese.
  • Pour mixture into piecrust; sprinkle with paprika. Place on the hot baking sheet in the oven; bake until golden brown. Set 30 min.

Notes

Cheddar cheese is good as well; and add more chiles to taste.

Viñales is a small town and municipality in the north-central Pinar del Río Province of Cuba.

We left Havanna around 8:30 and drove for a couple of hours through rural Cuba, to this region to the west of Havanna.  The road was shared with cars, horses, carts, bicycles and those walking.  No one was moving at high speeds.  We were in a modern car with our guide and driver.  The driver leased the car from the government for his tour business; the guide is an English professor at the university.

Our first stop was at a tobacco farm where we saw tobacco plants at several stages to being a cigar!  Later, we visited another tobacco farm where we also had a wonderful lunch beginning with mojitoes.  The foods were local fruits, vegetables, and meats.  Plenty of food but not excessive at all.  The meal was prepared in a nearby shed setup to be a kitchen.  We were offered white or black coffee by the farmer when we arrived.  It soon became clear that white coffee was a good choice for midday!

Mural de la Prehistoria–a painting done one the rocks depicting early inhabitants and prehistory; and a boat ride through a cave were on the agenda for the rest of the day.
