Asparagus, Goat Cheese & Tarragon Tart

Ingredients

  • 1 c goat cheese room temperature
  • 1 egg, large lightly beaten, room temperature
  • 1 clove garlic, large finely grated or minced
  • 1-1/2 T tarragon leaves, fresh chopped fine, include more at serving time
  • 1/2 T lemon zest finely grated
  • 1/2 t sea salt
  • 1 pinch nutmeg finely grated
  • 1 c creme fraiche room temperature
  • flour, all purpose for dusting works surface
  • 1 sheet puff pastry, all butter thaw if frozen, 9-14 oz
  • 8 oz asparagus, thin stalks woody ends trimmed
  • olive oil, extra virgin
  • 2 T Parmesan, grated
  • pepper, freshly ground
  • red pepper flakes optional
  • 1/2 c Parmesan, shaved shave with vegetable peeler

Instructions

  • Heat oven to 425 degrees. Bake 25-30 min, until pastry is puffed and golden.
  • In medium bowl, mash together with a fork or wooden spoon the goat cheese, egg, garlic, tarragon, lemon zest, salt and nutmeg until smooth.
  • With a whisk beat in the creme fraiche until smooth.
  • On a lightly floured surface, roll out puff pastry into a 13×11 inch rectangle about 1/8 inch thick. Transfer the dough to a parchment-lined baking sheet. With a sharp knife, lightly score a 1/2 inch border around the puff pastry.
  • Spread the creme fraiche mixture evenly inside the scored border. Line up the asparagus spears on top, and brush them with olive oil. Sprinkle some salt and grated Parmesan over the asparagus.
  • Bake 25-30 min, until pastry is puffed and golden. Cool for 15 min on baking sheet [or up to 4 hrs before serving]. Sprinkle black pepper, red pepper flakes, shaved Parmesan and tarragon leaves. Drizzle olive oil across the top.
  • Tip: Except for grated Parmesan and salt, ingredients may be assembled a day in advance. Sprinkle grated Parmesan and salt just before baking.

Tart Cherry Smoothie

Cool smoothie made from frozen tart cherries, bananas, coconut milk.

Ingredients

  • 2 cups frozen tart cherries
  • 2 bananas, chopped, frozen
  • 1 cup coconut water or plain water
  • 1 tsp vanilla or almond extract
  • sweetener to taste

Instructions

  • Blend all ingredients until smooth and creamy.
  • Serve immediately.
  • May be frozen; then thawed until softened.

Mexican Green Chile Corn Chowder

Ingredients

  • 6 large green chiles, roasted, peeled, chopped Yield: 1-1/2 c roasted, peeled, chopped. Chili type determines the heat of the chili
  • 3 T butter
  • 2 medium onions, diced Yield: 2-1/2 c diced
  • 2 ribs celery, diced Yield: 3/4 c diced
  • 1 clove garlic, minced Yield: 1 t, minced
  • 2 med potatoes, Yukon Gold, peeled, 1" chunks Yield: 10-12 oz, 1 in chunks.
  • 4 c corn
  • 5 c stock, vegetable or chicken Vegetable stock for vegetarian chowder.
  • 1 t salt
  • 2 leaves bay leaves
  • 1 t cumin, ground
  • 1/2 t oregano, dry
  • 1 c cream, heavy
  • 1/2 t black pepper

Instructions

  • In a 6 qt pot, over med heat, saute onions and celery in butter until soft and beginning to brown–8-10 min. Add garlic, cook for 1 min more.
  • Add stock and potatoes to the pot.
  • Add bay leaves, cumin, oregano, and salt.
  • Increase heat to a simmer for 8-10 min until potatoes are just barely cooked.
  • Add corn and cook for 5 min until corn is cooked all the way through, then add chiles.
  • Remove bay leaves. Stir in cream. Add black pepper to taste.

  • 3 eggs eggs
  • 1 qt cottage cheese
  • dash salt
  • .5 c flour
  • .5 c sugar
  • 1 t vanilla
  • 1 pt whipping cream
  • Lingonberry Jam

Instructions

  • Mix ingredients together well, in order given.
  • Bake at 325 degrees until set like custard.
  • Cool for 1 hr. Serve with lingonberry jam
