Green Chile Quiche
Servings 4 people
Ingredients
- 4 eggs large
- 1 c milk
- 1/3 c heavy cream
- 1/2 t salt Kosher
- 1/8 t pepper freshly ground
- 2 scallions finely chopped
- 1 14 oz can green chiles chopped, drained OR fresh roasted
- 1/2 c pepper jack cheese or cheddar grated
- 1 9 in pie crust deep dish
- paprika for sprinkling
Instructions
- Position rack in upper 1/3 of oven; set a baking sheet on the rack; preheat to 400 degrees.
- Whisk eggs, milk, heavy cream, 1/2 t salt, and 1/8 t pepper in a medium bowl. Whisk in the scallions, chiles and cheese.
- Pour mixture into piecrust; sprinkle with paprika. Place on the hot baking sheet in the oven; bake until golden brown. Set 30 min.
Notes
Cheddar cheese is good as well; and add more chiles to taste.
